1) “Doc” debut, 9 p.m., Fox. One of the season’s best new shows starts strongly: After a car crash, a doctor has lost eight years of memory. She’ll resist her bosses (shown here), re-learn modern medicine – and adjust to the tragedies and mistakes in her gap years. Molly Parker is subtly perfect, in a compelling drama.
2) “Kitchen Nightmares” opener, 8 p.m., Fox. With the Super Bowl coming to New Orleans on Feb. 9, Fox plans a quick build-up. On five Tuesdays, we’ll see Gordon Ramsay helps the town’s restaurants .That starts with a two-parter at the Iberville Cuisine & Oyster Bar, in the French Quarter.
3) “Finding Your Roots” season-opener, 8 p.m., PBS. The pasts of actress Amanda Seyfried and singer Lea Salonga reach back to Germany. (Yes, Salonga – a Filipino icon – has a German ancestor.) For Seyfried, this goes way back, to 1595. There are strong stories on both sides, including the rise and fall of fortunes, plus a scandal and a murder.
4) “Will Trent” and “The Rookie” season-openers, 8 and 10 p.m. Tuesday, ABC. With “High Potential” at 9, ABC now has an entertaining crime night, to battle CBS’ FBI shows. At 8 p.m., colleagues track down Will after off-duty cops are shot. At 10, inmates with a vendetta escape; John – feeling the effects of his age and a wound – welcomes two rookies.
5) “The Irrational” return, 10 p.m., NBC. “I don’t do stillness well,” Alec says. Now he has no choice. He’s in the hospital; his sometimes-girlfriend and his ex-wife try a perilous mission. The story is a stretch and the psychology elements feel forced, but the characters are fairly solid.
